Where do we get those delicious cookies?
In addition to the delicious pastry from
Holynut (gluten-free, sugar-free, organic and vegan), you will also sometimes get delicious gingerbread madeleines.
If you have tasted one, you can really only think of one thing: where do they come from?
Well: from our own kitchen! And now from yours too :
)
Tineke's "gingerbread" recipe(gluten free, sugar free, vegan)
Necessities6 medjoul dates (without stone)
1 banana (well riped)
125 gr. almond flour
125 gr. buckwheat flour
4 tsp. baking powder
1 tsp. baking soda
2 tsp. biscuit and gingerbread spices
2 tsp. cinnamon
125 gr. maple syrup or honey
50 gr. coconut oil
150 ml. vegetable milk (e.g. rice or oats)
pinch of salt
PreparationGrind the dates together with the banana in your food processor or with your hand blender into a paste.
Place all ingredients except the milk in a bowl and stir to combine.
Slowly heat the coconut oil with the honey in a pan.
Little by little, add the milk into a cake-like batter, making sure it doesn't become too runny.
You can make small cookies (like we do, we use a madeleine mold), but of course you can also make one big cake. Whatever you want! Then be sure to adjust the baking time.
Heat the oven to 160 degrees.
If you are making a cake, allow a baking time of about 35 to 40 minutes.
Our madeleines are in the oven for about 12 minutes.
